Mom's Cranberry Almond Biscotti

A PaceHouse Christmas treat.

Ingredients

    • 2 1/2 cups flour
    • 1 cup sugar
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon cinnamon
    • 1/2 teaspoon nutmeg
    • 2 eggs
    • 2 egg whites
    • 1 teaspoon vanilla extract
    • 3/4 cup sliced almonds
    • 6 ounces dried cranberries

Directions

    1. Combine dry ingredients.
    2. Whisk together eggs, egg whites, and vanilla in a separate bowl.
    3. Add to dry ingredients.
    4. Mix on medium speed until moist.
    5. Add cranberries and almonds.
    6. On floured surface, divide batter in half and pat into 14" x 1 1/2" logs.
    7. Bake on cookie sheet for 30 minutes at 325 degrees.
    8. Cut into 1/2" slices.
    9. Stand upright and bake an additional 20 minutes.
    10. Store in loosely covered container.
