Mom's Cranberry Almond Biscotti
A PaceHouse Christmas treat.

- 2 1/2 cups flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 eggs
- 2 egg whites
- 1 teaspoon vanilla extract
- 3/4 cup sliced almonds
- 6 ounces dried cranberries

Directions
- Combine dry ingredients.
- Whisk together eggs, egg whites, and vanilla in a separate bowl.
- Add to dry ingredients.
- Mix on medium speed until moist.
- Add cranberries and almonds.
- On floured surface, divide batter in half and pat into 14" x 1 1/2" logs.
- Bake on cookie sheet for 30 minutes at 325 degrees.
- Cut into 1/2" slices.
- Stand upright and bake an additional 20 minutes.
- Store in loosely covered container.
